Description

Delicious BBQ beef tacos made with tender shredded beef and fresh toppings.


Ingredients

  • 2 pounds beef chuck roast (trimmed and cut into chunks)
  • 1 cup BBQ sauce (smoky flavor preferred)
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 8 small corn tortillas (warmed)
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup sliced jalapeños (optional)

Instructions

  1. Place the beef chuck roast in the slow cooker and season with smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Pour the BBQ sauce and beef broth over the beef.
  3. Cover and cook on low for 6-8 hours or high for 4-5 hours until the beef is tender.
  4. Once cooked, shred the beef using two forks and mix it with the sauce.
  5. Warm the corn tortillas in a skillet over medium heat.
  6. Fill each tortilla with shredded beef, then top with lettuce, tomatoes, sour cream, cheese, and jalapeños if desired.
  7. Serve immediately with extra BBQ sauce on the side.
