Delicious BBQ beef tacos made with tender shredded beef and fresh toppings.

- 2 pounds beef chuck roast (trimmed and cut into chunks)
- 1 cup BBQ sauce (smoky flavor preferred)
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 8 small corn tortillas (warmed)
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup sour cream
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup sliced jalapeños (optional)
Instructions
- Place the beef chuck roast in the slow cooker and season with smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Pour the BBQ sauce and beef broth over the beef.
- Cover and cook on low for 6-8 hours or high for 4-5 hours until the beef is tender.
- Once cooked, shred the beef using two forks and mix it with the sauce.
- Warm the corn tortillas in a skillet over medium heat.
- Fill each tortilla with shredded beef, then top with lettuce, tomatoes, sour cream, cheese, and jalapeños if desired.
- Serve immediately with extra BBQ sauce on the side.
