A refreshing creamy salad featuring celery, slivered almonds, and a flavorful yogurt dressing.
Ingredients

- 3 cloves large garlic
- 1/4 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 teaspoon Aleppo pepper
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup slivered almonds
- 1 bunch celery (10 to 12 stalks)
- 3 scallions (thinly sliced)
- 1/3 cup chopped fresh mint leaves
Instructions
- For the dressing, mince garlic cloves, mash into a paste, then mix with Greek yogurt, lemon juice, olive oil, Aleppo pepper, salt, and black pepper in a medium bowl until well combined.
- In a small dry skillet over medium heat, toast slivered almonds for about 2 to 4 minutes until golden brown; set aside to cool.
- In the bowl of dressing, add thinly sliced celery stalks, scallions, and chopped mint; mix in all but two tablespoons of toasted almonds. Stir gently to coat.
- Garnish with reserved almonds and additional mint before serving.
Notes
- This salad can be served chilled or at room temperature.
- Make sure not to over-toast the almonds, as they can burn quickly.
