Description
Delicious spiced cookies that are soft on the inside and slightly crispy on the outside, perfect for any occasion.
Ingredients

- 1 3/4 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 6 Tablespoons butter (softened)
- 8 Tablespoons sugar (divided)
- 1/4 cup dark brown sugar
- 1 whole large egg
- 1/4 cup molasses
Instructions
- In a bowl whisk together flour, cinnamon, baking soda, ginger, cloves, baking powder, and salt until well combined. Set aside.
- In the bowl of an electric mixer beat together butter, 5 Tablespoons of sugar, and brown sugar for 3 minutes, until fluffy. Add the egg, and beat for 30 seconds.
- Mix in molasses until it is well combined.
- Slowly add the flour mixture, until everything is just combined and no white streaks remain.
- Scoop about 2 Tablespoons of dough and roll into balls. They will be about 1 1/2 inches in size. Place on a baking tray. Chill for 30 minutes.
- Preheat oven to 350º F.
- Roll each ball of dough in the remaining 3 Tablespoons of sugar.
- Place on a lined baking sheet, and bake for 12 minutes, or until the cookies are just set.
- Remove from the oven and let cook for a few minutes before removing to a wire rack to cool completely.
Notes
- For extra flavor, consider adding chopped nuts or chocolate chips to the dough.
- These cookies store well in an airtight container for several days.
