Description

Delicious spiced cookies that are soft on the inside and slightly crispy on the outside, perfect for any occasion.


Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 6 Tablespoons butter (softened)
  • 8 Tablespoons sugar (divided)
  • 1/4 cup dark brown sugar
  • 1 whole large egg
  • 1/4 cup molasses

Instructions

  1. In a bowl whisk together flour, cinnamon, baking soda, ginger, cloves, baking powder, and salt until well combined. Set aside.
  2. In the bowl of an electric mixer beat together butter, 5 Tablespoons of sugar, and brown sugar for 3 minutes, until fluffy. Add the egg, and beat for 30 seconds.
  3. Mix in molasses until it is well combined.
  4. Slowly add the flour mixture, until everything is just combined and no white streaks remain.
  5. Scoop about 2 Tablespoons of dough and roll into balls. They will be about 1 1/2 inches in size. Place on a baking tray. Chill for 30 minutes.
  6. Preheat oven to 350º F.
  7. Roll each ball of dough in the remaining 3 Tablespoons of sugar.
  8. Place on a lined baking sheet, and bake for 12 minutes, or until the cookies are just set.
  9. Remove from the oven and let cook for a few minutes before removing to a wire rack to cool completely.

Notes

  • For extra flavor, consider adding chopped nuts or chocolate chips to the dough.
  • These cookies store well in an airtight container for several days.
