Description

Delicious spiced carrot fries served with a creamy whipped ricotta dip and a crunchy pistachio gremolata.


Ingredients

  • 1 pound carrots, cut into thin fries
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon smoked paprika
  • 1 cup ricotta cheese
  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • ¼ cup pistachios, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the carrot fries with olive oil, salt, pepper, and smoked paprika until evenly coated.
  3. Spread the carrot fries in a single layer on the prepared baking sheet and bake for 20-25 minutes, turning halfway through.
  4. In a medium bowl, combine ricotta cheese, honey, and lemon juice; whip until smooth.
  5. In a small bowl, mix together chopped pistachios, parsley, and lemon zest for the gremolata.
  6. Serve warm carrot fries with the whipped dip and sprinkle pistachio gremolata on top.
