- 1 cup jasmine rice
- 2 tablespoons butter
- 1 medium yellow onion, thinly sliced
- 2 cups chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Rinse the jasmine rice under cold water until mostly clear.
- Melt the butter in a saucepan over medium heat.
- Add the onion and cook slowly until golden and soft.
- Stir in the rice and toast for one minute.
- Add broth, salt, and pepper, and bring to a gentle boil.
- Cover, reduce heat, and simmer until liquid is absorbed.
- Rest for five minutes, then fluff and serve.

- For best results, rinse the rice thoroughly before cooking.
