Description

Deliciously stuffed avocados with a savory taco filling.


Ingredients

Scale
  • 1 lb ground beef (85/15 or leaner)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet (or 2 Tbsp) sugar-free taco seasoning
  • 1/2 cup water
  • Salt and pepper to taste
  • 3 large ripe avocados, halved and pitted
  • 1 tablespoon lime juice
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup diced tomatoes
  • 2 tablespoons chopped fresh cilantro
  • 1 jalapeño, thinly sliced (optional)

Instructions

  1. In a large skillet over medium-high heat, cook the ground beef, breaking it apart with a spatula, until it’s no longer pink. Drain any excess fat.
  2. Add the diced onion and garlic to the skillet with the beef. Cook for 3-4 minutes, or until the onion is soft and translucent.
  3. Sprinkle the taco seasoning over the meat mixture. Pour in the water and stir well to combine. Reduce heat to low and let it simmer for 5-7 minutes until the sauce thickens. Season with salt and pepper to taste.
  4. While the filling cooks, prepare the avocados. Scoop a little flesh out of each avocado half to create a larger ‘boat’ (you can save this extra avocado for the filling or a garnish).
  5. Drizzle the avocado halves with lime juice to prevent browning.
  6. Spoon the hot taco filling generously into each avocado half.
  7. Top with shredded cheddar cheese, a dollop of sour cream, diced tomatoes, cilantro, and jalapeño slices if using.
