Description
Deliciously stuffed avocados with a savory taco filling.
Ingredients

- 1 lb ground beef (85/15 or leaner)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 packet (or 2 Tbsp) sugar-free taco seasoning
- 1/2 cup water
- Salt and pepper to taste
- 3 large ripe avocados, halved and pitted
- 1 tablespoon lime juice
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup diced tomatoes
- 2 tablespoons chopped fresh cilantro
- 1 jalapeño, thinly sliced (optional)
Instructions
- In a large skillet over medium-high heat, cook the ground beef, breaking it apart with a spatula, until it’s no longer pink. Drain any excess fat.
- Add the diced onion and garlic to the skillet with the beef. Cook for 3-4 minutes, or until the onion is soft and translucent.
- Sprinkle the taco seasoning over the meat mixture. Pour in the water and stir well to combine. Reduce heat to low and let it simmer for 5-7 minutes until the sauce thickens. Season with salt and pepper to taste.
- While the filling cooks, prepare the avocados. Scoop a little flesh out of each avocado half to create a larger ‘boat’ (you can save this extra avocado for the filling or a garnish).
- Drizzle the avocado halves with lime juice to prevent browning.
- Spoon the hot taco filling generously into each avocado half.
- Top with shredded cheddar cheese, a dollop of sour cream, diced tomatoes, cilantro, and jalapeño slices if using.

- Optional: use a different type of cheese or add additional toppings as desired.
