- 1/2 cup powdered sugar
- 1 tablespoon fresh lemon zest

- 1/2 cup cornstarch

- 1/2 cup powdered sugar (for coating)
Instructions
- Cream the butter and sugar. In a large mixing bowl, cream the softened butter with the powdered sugar until light and fluffy. This should take about 2 minutes using a hand mixer on medium speed. The sugar will begin to dissolve into the butter, creating a smooth, velvety base.
- Add the lemon flavor. Stir in the fresh lemon zest and lemon juice. It’s important to use fresh lemons here, as the zest holds all those aromatic oils that bring the bright citrus flavor to life. Your kitchen will instantly smell amazing.
- Mix in the dry ingredients. In a separate bowl, whisk together the flour, cornstarch, and salt. Slowly add this dry mixture to the butter mixture, mixing just until combined. Don’t overmix—just enough so there’s no streak of flour left. The dough should be soft and tender, not sticky.
- Chill the dough. Divide the dough in half and shape each half into a log about 1 1/4 inches in diameter. Wrap in plastic wrap and refrigerate for at least 1 hour. This step helps the cookies hold their shape and enhances the melt-in-your-mouth texture.
- Slice and bake. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper. Unwrap the dough and slice into 1/4-inch thick rounds. Place them about 1 inch apart on the prepared sheets. Bake for 12–14 minutes, or until the edges are just barely golden.
- Dust with powdered sugar. While the cookies are still warm, roll them gently in powdered sugar. Let them cool completely on a wire rack. Optionally, dust them once more with powdered sugar for that extra snow-dusted look.
