- 1 cup all-purpose flour
- 2 large eggs
- 1 ½ cups milk
- 2 tablespoons melted butter
- 1 pound ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon ground black pepper
- 1 tablespoon fresh parsley, chopped
- Sour cream
- Chopped chives
Instructions
- In a mixing bowl, whisk together flour, eggs, milk, melted butter, and salt until smooth. Let the batter rest for 15 minutes.
- Heat a non-stick skillet over medium heat. Pour about ¼ cup of batter into the skillet and swirl to spread evenly. Cook until golden brown (1-2 minutes), then flip and cook for another minute. Set aside and repeat with remaining batter.
- In a large skillet, cook ground beef over medium heat until browned; drain excess fat. Stir in seasonings and parsley; cook for an additional 2-3 minutes.
- To assemble, place a few tablespoons of filling on one half of each crepe and fold over to enclose the filling.
- Garnish with sour cream and chopped chives before serving.
