A delicious and easy cheesy pepperoni bake perfect for weeknights.
Ingredients

- 2 cups cottage cheese
- 1 ½ cups shredded mozzarella
- ½ cup pepperoni slices (or turkey pepperoni)
- 3 large eggs
- 1 tsp Italian herbs
- ½ tsp garlic powder
- ¼ cup pizza sauce (for topping)
- Salt + pepper
- Optional but delicious: diced bell peppers, olives
Instructions
- Blend cottage cheese until completely smooth.
- Mix in eggs, Italian herbs, garlic powder, salt, pepper, and 1 cup mozzarella.
- Spread into greased 8×8 baking dish.
- Top with pizza sauce, remaining mozzarella, and pepperoni.
- Bake at 350°F (175°C) for 28-32 minutes until golden and bubbly.
