Description

A delicious and easy cheesy pepperoni bake perfect for weeknights.


Ingredients

Scale
  • 2 cups cottage cheese
  • 1 ½ cups shredded mozzarella
  • ½ cup pepperoni slices (or turkey pepperoni)
  • 3 large eggs
  • 1 tsp Italian herbs
  • ½ tsp garlic powder
  • ¼ cup pizza sauce (for topping)
  • Salt + pepper
  • Optional but delicious: diced bell peppers, olives

Instructions

  1. Blend cottage cheese until completely smooth.
  2. Mix in eggs, Italian herbs, garlic powder, salt, pepper, and 1 cup mozzarella.
  3. Spread into greased 8×8 baking dish.
  4. Top with pizza sauce, remaining mozzarella, and pepperoni.
  5. Bake at 350°F (175°C) for 28-32 minutes until golden and bubbly.

Notes

  • Weeknight protein win: chop veggies tiny for picky eaters!
