Description

A hearty slow cooker chili packed with beans and spices, perfect for a cozy meal.


Ingredients

  • 1 lb ground beef (optional)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 cup beef or vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Shredded cheddar cheese
  • Sour cream or plain Greek yogurt
  • Sliced jalapeños
  • Fresh cilantro, chopped
  • Cornbread or tortilla chips

Instructions

  1. In a skillet over medium-high heat, cook the ground beef with the chopped onion until the beef is browned and the onion is softened, about 8-10 minutes. Drain any excess fat. Stir in the minced garlic and cook for 1 more minute.
  2. Transfer the cooked beef and onion mixture (or just the chopped onion and garlic if making it vegetarian) to a 6-quart slow cooker.
  3. Add the drained black beans, kidney beans, and pinto beans.
  4. Pour in the crushed tomatoes, tomato sauce, and broth.
  5. Add all the spices: chili powder, cumin, smoked paprika, and oregano. Season with salt and pepper.
  6. Stir everything together until well combined.
  7. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The chili is done when the flavors are well blended and it’s heated through.
  8. Taste and adjust seasoning if needed. Ladle the chili into bowls and top with your favorite garnishes like cheese, sour cream, jalapeños, and cilantro. Serve warm with cornbread or chips on the side.

Notes

  • This chili can be made vegetarian by omitting the ground beef.
  • Feel free to adjust the spices according to your preference.
