Description

Delicious BBQ chicken legs baked with fresh vegetables.


Ingredients

  • 2 cups sliced carrots
  • ½ small onion (rough chopped)
  • 3 cloves garlic
  • 2 tablespoons olive oil (divided)
  • ½ teaspoon kosher salt (divided)
  • ½ teaspoon coarsely ground black pepper (divided)
  • ¼ teaspoon smoked paprika
  • 3 tablespoons barbecue sauce
  • 3 chicken legs

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Add the carrots, onions, and garlic to a small baking dish. Drizzle with 1 tablespoon of olive oil and season with ¼ teaspoon salt, ¼ teaspoon black pepper, and ¼ teaspoon smoked paprika. Toss to coat evenly.
  3. In a small bowl, stir together the BBQ sauce, 1 tablespoon olive oil, ¼ teaspoon salt, and ¼ teaspoon black pepper.
  4. Place the chicken legs in a bowl and pour the BBQ sauce mixture over them. Turn the chicken to coat all sides.
  5. Arrange the chicken legs on top of the vegetables in a single layer.
  6. Bake uncovered for 40 minutes, until the chicken is cooked through.
  7. Remove from the oven, cover loosely with foil, and let rest for 10 minutes before serving.
