Description

A delicious and hearty beef and cabbage soup that’s perfect for a cozy dinner.

Ingredients

Scale
  • 2 teaspoons Olive Oil
  • 3 cloves Garlic (minced or 1 tablespoon pre-minced Garlic)
  • 1 pound Lean Ground Beef
  • 1/2 Yellow Onion (finely diced)
  • 5 cups Chopped Green Cabbage
  • 2 Carrots (peeled and shredded)
  • 4 cups Beef Broth
  • 2 cups Water
  • 1 tablespoon Worcestershire Sauce
  • 2 8 ounce cans Tomato Sauce
  • 3/4 cup Uncooked Long Grain Rice
  • 1/2 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoons Brown Sugar
  • 1 Bay Leaf

Instructions

  1. Heat the olive oil in a large stock pot or dutch oven over medium high heat.
  2. Add in the ground beef with the diced onion. Sauté for approximately 4-6 minutes, breaking up the beef as it cooks until the beef is browned and the onions are tender.
  3. Stir in the minced garlic and cook for 1 minute until you can start to smell the garlic.
  4. Add in the beef broth, water, chopped cabbage, shredded carrots, tomato sauce, Worcestershire Sauce, rice, dried oregano, salt, pepper, brown sugar, and bay leaf. Stir to combine.
  5. Bring the mixture to a boil. Reduce the heat to medium low and simmer for 25-30 minutes until the rice is cooked through.
  6. Remove the bay leaf.
  7. Serve warm and enjoy!
