Description
A delicious and hearty beef and cabbage soup that’s perfect for a cozy dinner.
Ingredients

- 2 teaspoons Olive Oil
- 3 cloves Garlic (minced or 1 tablespoon pre-minced Garlic)
- 1 pound Lean Ground Beef
- 1/2 Yellow Onion (finely diced)
- 5 cups Chopped Green Cabbage
- 2 Carrots (peeled and shredded)
- 4 cups Beef Broth
- 2 cups Water
- 1 tablespoon Worcestershire Sauce
- 2 8 ounce cans Tomato Sauce
- 3/4 cup Uncooked Long Grain Rice
- 1/2 teaspoon Dried Oregano
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 tablespoons Brown Sugar
- 1 Bay Leaf
Instructions
- Heat the olive oil in a large stock pot or dutch oven over medium high heat.
- Add in the ground beef with the diced onion. Sauté for approximately 4-6 minutes, breaking up the beef as it cooks until the beef is browned and the onions are tender.
- Stir in the minced garlic and cook for 1 minute until you can start to smell the garlic.
- Add in the beef broth, water, chopped cabbage, shredded carrots, tomato sauce, Worcestershire Sauce, rice, dried oregano, salt, pepper, brown sugar, and bay leaf. Stir to combine.
- Bring the mixture to a boil. Reduce the heat to medium low and simmer for 25-30 minutes until the rice is cooked through.
- Remove the bay leaf.
- Serve warm and enjoy!

- This soup is great for meal prep and tastes even better the next day.
