Description

Delicious cashew butter cookies that are easy to make and perfect for any occasion.


Ingredients

Scale
  • 1 cup cashew butter
  • 3/4 cup brown sugar (or coconut sugar)
  • 1 large egg

Instructions

  1. Preheat the oven to 180C/350F. Line a large tray with parchment paper or prepare a cookie sheet.
  2. In a large mixing bowl, combine the cashew butter, brown sugar, and egg. Fold in the chocolate chips, if using.
  3. Form 12 small balls of dough and place them on the lined tray. Press each ball into a cookie shape.
  4. Bake for 10-12 minutes, or until just cooked on top and golden around the edges.
  5. Remove cookies from the oven and allow to cool on the tray completely.

Notes

  • These cookies can be made with or without chocolate chips, depending on your preference.
  • Store cookies in an airtight container for up to one week.
