Delicious caramelized sugar cookies with a soft center and crispy top.
Ingredients

- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1/2 cup heavy cream
- 1 tablespoon cornstarch
- 1/4 cup granulated sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar using an electric mixer until the mixture is light and fluffy (about 3-4 minutes).
- Add the egg and vanilla extract to the butter mixture, and continue to beat until combined.
- Slowly add the flour mixture to the wet ingredients, mixing on low speed until just incorporated.
- In a small saucepan, heat the heavy cream over medium heat until just bubbling (do not boil). Remove from heat and whisk in the cornstarch until smooth.
- Allow the cream to cool slightly before gently folding it into the cookie dough mixture until well combined.
- Using a cookie scoop or tablespoons, drop dollops of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Once cookies are cooled, sprinkle about 1 teaspoon of granulated sugar on top of each cookie.
- Using a kitchen torch, carefully caramelize the sugar on top until it melts and forms a crispy layer. If you don’t have a torch, you can place the cookies under the broiler for a few seconds, watching them closely to avoid burning.
- Allow the caramelized sugar to cool and harden before serving.
