Description
Deliciously spiced ginger cookies that are soft in the center with a slightly crisp edge.

- 2 ½ cups all-purpose flour
- 1 tablespoon ground ginger
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup unsalted butter, softened
- 1 cup packed brown sugar
- 1 large egg
- 1 tablespoon vanilla extract
- 2 tablespoons brewed coffee, cooled
- ½ cup powdered sugar
- 2 teaspoons brewed coffee
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, ginger, cinnamon, nutmeg, baking soda, and salt.
- In another bowl, cream together softened butter and brown sugar until light and fluffy.
- Beat in egg, vanilla extract, and cooled brewed coffee until well combined.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Scoop dough onto the prepared baking sheet spaced evenly apart.
- Bake for 10-12 minutes until edges are set but centers remain soft.
- Allow to cool slightly before transferring to a wire rack.
- Drizzle with icing made from powdered sugar and brewed coffee.
