- 4 boneless skinless chicken breasts
- 2 medium sweet potatoes, peeled and cubed
- 3 tablespoons honey
- 4 cloves garlic, minced
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt
- 1 teaspoon dried thyme
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine honey, minced garlic, soy sauce, olive oil, paprika, black pepper, salt, dried thyme, and parsley.
- Place chicken breasts in a baking dish and pour the honey garlic mixture over them.
- Add the sweet potatoes around the chicken in the baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and sweet potatoes are tender.
Notes
- For extra flavor, marinate the chicken in the sauce for a few hours before baking.
- Substitute chicken thighs if preferred.
