Description

Ingredients

  • 3 large sweet potatoes, peeled and sliced into ½-inch rounds
  • 1 cup dark brown sugar
  • ½ cup unsalted butter, melted
  • 1 tsp ground cinnamon
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • ½ cup chopped pecans (optional, toasted)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a bowl, mix melted butter, brown sugar, cinnamon, vanilla extract, and salt until combined.
  3. Toss the sweet potato slices in the mixture until well-coated.
  4. Arrange the sweet potatoes in the baking dish and cover with foil. Bake for 30 minutes until tender.
  5. Remove foil and bake for another 15 minutes until golden brown.
  6. Top with toasted pecans if desired.
