A delicious recipe for candied sweet potatoes topped with pecans.

- 3 large sweet potatoes, peeled and sliced into ½-inch rounds
- 1 cup dark brown sugar
- ½ cup unsalted butter, melted
- 1 tsp ground cinnamon
- 1 tsp pure vanilla extract
- Pinch of salt
- ½ cup chopped pecans (optional, toasted)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
- In a bowl, mix melted butter, brown sugar, cinnamon, vanilla extract, and salt until combined.
- Toss the sweet potato slices in the mixture until well-coated.
- Arrange the sweet potatoes in the baking dish and cover with foil. Bake for 30 minutes until tender.
- Remove foil and bake for another 15 minutes until golden brown.
- Top with toasted pecans if desired.
