Description

Ingredients

  • 1 lb medium shrimp, peeled and deveined
  • 3 cups day-old rice
  • 3 tbsp vegetable oil (canola or peanut)
  • 2 cloves garlic, minced
  • 4 green onions, chopped
  • 3 tbsp low-sodium soy sauce
  • 2 tsp sesame oil

Instructions

  1. Prepare your ingredients by chopping green onions and mincing garlic. Thaw shrimp if using frozen.
  2. Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add shrimp in a single layer and cook for about 2 minutes per side until pink and opaque. Remove from the pan.
  4. In the same pan, add another tablespoon of oil if needed and sauté minced garlic for 30 seconds.
  5. Stir-fry chopped green onions and any desired vegetables for about 2 minutes until tender-crisp.
  6. Add the day-old rice back to the pan along with cooked shrimp, soy sauce, and sesame oil. Toss until heated through and well combined.

Notes

  • For best results, use day-old rice to prevent sogginess.
  • Feel free to add any additional vegetables like peas or carrots.
