- 4 boneless, skinless chicken breasts
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then add to the skillet and cook for 6-7 minutes on each side until golden and cooked through. Remove the chicken and set aside.
- In the same skillet, add minced garlic and sauté until fragrant, about 30 seconds to 1 minute.
- Pour in heavy cream and bring to a gentle simmer. Stir in parmesan cheese and mix until melted and the sauce thickens slightly, about 2-3 minutes.
- Mix in sun-dried tomatoes and basil, ensuring they’re well incorporated.
- Return the cooked chicken to the skillet, spoon the sauce over the top, and let it heat through for an additional 2-3 minutes.
- Serve hot, garnished with extra basil if desired.
