Description

A delicious recipe for Beef Birria Tacos with shredded beef, flavorful spices, and melted cheese.


Ingredients

  • 2 pounds beef chuck roast, cut into chunks
  • 4 cups beef broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 dried ancho chilies, stemmed and seeded
  • 2 dried guajillo chilies, stemmed and seeded
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 12 corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat vegetable oil over medium-high heat. Add beef chunks and brown on all sides, about 5-7 minutes.
  2. Add chopped onion and minced garlic to the pot. Cook until softened, about 3-4 minutes.
  3. In a blender, combine dried ancho chilies, dried guajillo chilies, ground cumin, dried oregano, salt, and black pepper with 1 cup of beef broth. Blend until smooth.
  4. Pour the chili mixture into the pot with the beef. Add the remaining beef broth.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 2-3 hours, until beef is tender and easily shredded.
  6. Remove beef from the pot and shred with two forks. Return shredded beef to the pot and stir to combine with the broth.
  7. Heat a skillet over medium heat. Dip each corn tortilla in the birria broth, then place in the skillet. Cook for about 30 seconds per side until slightly crispy.
  8. Fill each tortilla with shredded beef and a sprinkle of Monterey Jack cheese. Fold in half and cook in the skillet for another minute until cheese melts.
  9. Serve tacos with chopped fresh cilantro and lime wedges on the side.
