Ingredients

  • 45 lbs Prime Rib Roast
  • 2 tbsp Fresh Rosemary, chopped
  • 2 tbsp Fresh Thyme, chopped
  • 6 Garlic cloves, minced
  • 3 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a bowl, mix garlic, rosemary, thyme, salt, pepper, and olive oil into a paste.
  3. Rub the herb mixture generously over the prime rib roast.
  4. Place the roast on a rack in a roasting pan and sear in the oven for 20 minutes.
  5. Reduce the temperature to 325°F (165°C) and continue cooking until a meat thermometer reads 130°F (54°C) for medium-rare (about two hours total).
  6. Let the roast rest for at least 20 minutes before slicing and serving with pan juices.
