- 4–5 lbs Prime Rib Roast
- 2 tbsp Fresh Rosemary, chopped
- 2 tbsp Fresh Thyme, chopped
- 6 Garlic cloves, minced
- 3 tbsp Olive Oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 450°F (230°C).
- In a bowl, mix garlic, rosemary, thyme, salt, pepper, and olive oil into a paste.
- Rub the herb mixture generously over the prime rib roast.
- Place the roast on a rack in a roasting pan and sear in the oven for 20 minutes.
- Reduce the temperature to 325°F (165°C) and continue cooking until a meat thermometer reads 130°F (54°C) for medium-rare (about two hours total).
- Let the roast rest for at least 20 minutes before slicing and serving with pan juices.
