Delicious baked potatoes stuffed with seasoned chicken, broccoli, cheese, and sour cream.

- 4 large baking potatoes
- 1 pound boneless, skinless chicken breasts, diced
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- 1 cup steamed broccoli florets
- ½ cup chopped green onions
- 2 tablespoons fresh parsley
Instructions
- Preheat oven to 400°F (200°C). Pierce potatoes with a fork and bake on the rack for 45-60 minutes until tender.
- In a skillet over medium heat, heat olive oil. Add diced chicken seasoned with salt, pepper, and smoked paprika; cook for 8-10 minutes until fully cooked.
- In a bowl, combine cooked chicken, steamed broccoli, cheddar cheese, sour cream, and half of the green onions.
- Once potatoes are baked, cut a slit down each potato and scoop out some flesh to create space for filling.
- Stuff each potato with the chicken mixture and return to the oven for an additional 10 minutes until heated through.
Notes
- Feel free to add more vegetables or toppings as desired.
- Can substitute chicken with cooked ground beef or turkey.
